Gigi's Banana Bread
Mike's mom made the best banana bread ever and it was the recipe passed to her from her mom. It's banana-y but not too sweet and rich but not heavy. You can make it into 2 large loaves or 3 dozen muffins.
5 large bananas
4 eggs (well beaten)
1 cup Raw Coconut Oil
2 cups Brown sugar
4 cups sifted flour
1 tablespoon Fallidays spice (and pumpkin spice blend will work)
2 teaspoons baking soda
1 teaspoon salt
Beat bananas until liquid. Add well beaten eggs and mix thoroughly. Set aside. Cream sugar and coconut oil and then add banana mixture and beat. Mix flour, spice blend, soda, and salt and add to liquid and mix just until smooth. Grease two large loaf pans or 4 small. Bake 45 minutes at 350 degrees.
For 3 dozen muffins cook for 15-18 minutes.
