Dad’s Beans and Rice

(Electric Pressure Cooker Required)

What’s more simple and filling than beans and rice? Mike has perfected this recipe over the years and can whip it together pretty quickly these days!  We load them up with all sorts of toppings so every bowl is quite a unique masterpiece!

 

2 onions

3 cups dried beans black or pinto (rinsed)

2-3 cloves garlic - minced

2 tsp smoked paprika

1 tbs chipotle powder

1 tsp cumin

2 tbs Olive Oil

 

PREPARATION

 

Chop and saute the onions in olive oil until translucent.  Add garlic, paprika, chipotle powder, and cumin to onions and saute for one more minute. If you have other spices that you prefer, feel free to personalize!

 

Pour beans in with onions and spices and stir a couple times.  Add enough water until the mixture is covered by about two inches of water.  Add a bit of olive oil to the water.

 

Set pressure cooker on high and cook for 45 minutes.  At this point start cooking your rice of choice.

 

After the beans are done cooking, if you have the time, allow a slow release of pressure.  Add salt to taste. Pour over the rice and serve with your choice of cheese, sour cream, hot sauce, avocado, or salsa.  Enjoy!

 

*If you like meat with your beans, you can saute a ham hock or two with the onions and cook it along with the beans in the pressure cooker.  When it’s all done cooking, pull out the ham hock and remove any meat from the bone and add back to the beans. Or just add bacon bits at the end!
