Easy Spaghetti with Meatballs
8-10 servings
Some nights you want something homemade and comforting but you don't necessarily want it to take all day to get it ready. Well, this is the perfect meal for you then! We make it easy but getting premade Italian meatballs and canned tomatoes. Change it up by adding some fresh basil or grated parmesan to taste! Consider leaving the meatballs out for a meatless but still filling option!
1 onion - finely chopped
2 stalks of celery - finely chopped
4 cloves of garlic - minced
2 cups red wine
2 28 oz cans crushed tomatoes
1 tablespoon Italian seasoning - we love this brand
2-3 lbs Italian meatballs (depending on how hungry you are)
2 lbs spaghetti
PREPARATION
Saute the onions and celery in olive oil over medium heat until translucent. Add garlic, italian seasoning and saute for one more minute. If you have other spices that you prefer, feel free to personalize! Add the red wine and let it cook down until it is nearly gone. Add the crushed tomatoes and reduce heat to medium/low and let simmer 10-15 minutes or so.
Meanwhile, cook the meatballs and the pasta according to package directions. Try to time it so that the pasta doesn't have much time to sit and become sticky.
When the meatballs and pasta are done toss them in a big pot or bowl with the sauce and serve immediately with a sprinkle of fresh basil and parmesan. For extra comfort - eat it with a side of warm garlic bread!
